Ingredients
- Cooking spray
- ½ to 1 cup washed baby spinach, chopped
- ¼ cup onion, chopped
- 1-3 teaspoons garlic, minced (to taste)
- 3 bacon strips
- 1 cup shredded cheese
- 4 eggs
- 1 ¾ cups milk
- ½ teaspoon pepper
- 1 teaspoon salt
- ½ cup Bisquick®
Directions
- Preheat oven to 350 degrees.
- Spray a medium, nonstick frying pan with cooking spray. Sauté spinach, onion, and garlic over medium heat until softened.
- Meanwhile, cook three strips of bacon in the microwave according to package directions. Crumble or tear bacon into small pieces.
- Spray a standard pie dish with cooking spray. Sprinkle spinach mixture, bacon crumbles, and cheese evenly across bottom of pie dish. Set aside.
- In a large bowl, beat together eggs and milk until well blended.
- Add remaining ingredients (Bisquick, pepper, and salt) to egg mixture and beat until well blended (some small Bisquick lumps are fine).
- Pour Bisquick mixture evenly into pie dish, over the other ingredients.
- Bake the quiche at 350 degrees for 50 minutes, until top is golden-brown and a knife inserted in the center of the quiche comes out clean. Let the quiche stand for at least five minutes before cutting and serving.
